Everyone’s Favorite Lentil Soup


  • 2 cups green or red lentils
  • 1 tbsp salt
  • 1 tbsp of Iranian seasoning
  • 4 cups of water
  • 1 tbsp of tomato paste
  • 1 small yellow onion
  • 1 whole garlic bunch


Chop and saute the onion on medium heat.  Chop the garlic and add the onion.  Immediately add the Iranian seasoning and tomato paste.  Stir the ingredients for a minute or two.  Rinse the lentils for 2-3 minutes.  Add the lentils, water and salt to the onion mixture.  Turn the heat up until water begins to boil.  As soon as the water boild, turn heat to low.  Cover and let summer on low for 30 – 45 minutes.  It will be done when it is not too watery or too thick – “good soup consistency”.
